Rootbeer Coconut Cream popsicles

    We are going through a heat wave here in Northern California. I love it! Warm nights and the opportunity to have lots of popsicles. When I am sitting having a popsicle it reminds me of my childhood and sparks a little fun in my soul. It gives me the opportunity to sit, relax and enjoy every lick of my delicious popsicle. It helps me remember to have fun in my life. This may sound silly that a popsicle brings all this wisdom to me but it does. Sometimes I need the reminder that life is meant to be FUN!!! I am great at getting things done, being serious, and making things happen but I can work on having more joy and fun in my life. It doesn't always have to big things but small is where it is at. Having a popsicle, dancing while making a meal, making silly jokes and even dressing up my dog, Lady brings an array of fun into my life! I am making a point to have more fun in my life and I hope you will follow me on this journey! Lets have fun everyday and you can start with making these root beer coconut cream popsicles.
    These popsicles are like a root beer float in your mouth. So simple and delicious you'll want to have them over and over again.

Rootbeer Coconut Cream Popsicles
Ingredients:
1 12fl oz bottle of root beer
1 can of coconut milk
1-2 tablespoons of maple syrup
1 teaspoon of vanilla extract
Instructions:
1. Take your can of coconut milk and place it in the fridge for 2-3 hours or overnight. This is going to make all the cream come to the top.
2.In a blender pour your root beer, maple syrup, and vanilla in. (I like the recipe with 2 tablespoons of maple syrup but if you want less sugar use 1). Open your can of coconut milk and just take the cream off the top; it will be a thick white layer on top of the can. The remaining will be more clear and you can use it in a smoothie or whatever you like.
3. Blend it for a minute or two until it is completely mixed.
4. Pour your root beer mixture into your popsicle molds. A word of caution do not fill them all the way to the top because when they are frozen they will expand. Wait till they are frozen and enjoy!!!
